Viva Mexico! Arriba arriba! Andale Andale!
Saturday was Mexico's Independence day and Kimo's birthday, both of which were a perfect excuse to throw a big food feast at the Plum Palace. And after the big feast that Tracy had prepared at her house a couple of weeks ago, we were not going to be left behind!The main attraction was a Huachinango (red snapper, aka as an Opakapaka here in Hawai'i) sarandeado (grilled over coals).
Problem was that I had never made this dish before, and the fish we got was too big (6 lbs) for the grill, so I had to
improvise and build a little fire pit where the main attraction was to be cooked.The menu consisted of the following:
Aptetizers
- Papaya with lime and salt
- Chips & salsa
- Mushrooms al Ajillo
- Guacamole
Main Dishes
Frijoles
Arroz (rice) Verde (green)
Tamales Oaxaca Style, and
Huachinango Sarandeado..
Dessert
Flan
Cake
Glad to say that everything (fish included) turned out really good (the fish was all gone!).Had a good ol' time "talkin story" having beers & Margarita's and enjoying a good meal in good company.

Mentos Experiment Creates Great Response
well, it seems that the video of the Mentos in Diet Pepsi experiment has triggered a great amount of response from our viewing friends, therefore, we are planning on improving the design of the experiment and add a reduced orifice nozzle through which we can increase the velocity of the soda leaving the bottle and increase the hight of the jet, so stay posted!
